We are looking for a dynamic and creative Executive Chef to lead the culinary operations across our renowned Front Street restaurants, including Manta Ray, Romano’s, Marina Café, Mariners, Bommie, and more. This role is pivotal in delivering outstanding dining experiences through innovative menu design and exceptional team leadership. The ideal candidate will bring a blend of creativity, strategic leadership, and operational expertise to consistently deliver the highest standards of quality and service to our diverse clientele.

 

Your Role

As the Executive Chef, you will be responsible for crafting memorable dining experiences while achieving both operational and financial goals. Key responsibilities include:

  • Menu Innovation: Design and refresh menus that reflect each restaurant’s unique identity, using seasonal ingredients and culinary trends to keep offerings fresh and engagin

  • Team Leadership: Lead, train, and manage kitchen teams, ensuring smooth operations through effective scheduling, fostering a collaborative environment.

  • Operational Excellence: Oversee food cost management, minimise waste, and maintain relationships with suppliers to ensure quality ingredients. Manage the kitchen budget to achieve financial targets while maintaining high standards of quality and service.

To be successful in this role, you will need:

  • Leadership Skills: Proven ability to inspire and lead a large team, creating a positive and collaborative work culture.

  • Culinary Expertise: Extensive experience in high-volume venues with a range of cuisines, and a talent for designing innovative, on-brand menus.

  • Adaptability: Ability to excel in a fast-paced environment, managing challenges with flexibility and composure.

  • Communication Skills: Strong interpersonal skills, enabling effective communication with both team members and guests.

  • Operational and Financial Acumen: Proficiency in budget management, cost control, and inventory management.

 

You will also have:

  • Certificate III in Commercial Cookery (Essential)

  • Current Food Safety Supervisor Certificate (Essential) and a deep understanding of health and safety regulations.

  • Current valid Drivers Licence (Essential)

  • Restricted Drivers Authority or ability to obtain (Valid Drivers licence and at least 3 years clean driving record) (Essential)

  • Minimum 5 years’ experience in an Executive or Head Chef position in a high-volume, diverse culinary environment.

  • Demonstrated proficiency in IT systems, Microsoft Word, Excel or equivalent  for kitchen management
