An opportunity now exists for a Restaurant Manager to lead our front of house team and to work closely with our Executive Chef to create memorable dining experiences for our discerning guests.

About the role

Reporting directly to the Food & Beverage Manager you will be responsible for the day to day operation of Pebble Beach and The Long Pavilion restaurants which includes:

  • Providing impeccable service to meet the expectations of our guests
  • Managing all booking and guest requests
  • Overseeing floor service ensuring it is to a fine dining standard, while still relaxed and intuitive
  • Staff management including training and development, mentoring and discipline.
  • Staff recruitment supported by the Hamilton Island recruitment team
  • Rostering, planning and event management
  • Cost control, budgets and stock control.

You will also have:

  • Impeccable grooming and presentation
  • Excellent time management skills & ability to adapt & personalise guest experiences
  • Previous management experience in a la carte fine dining and tasting menus
  • Strong wine knowledge
  • Ability to remain calm under pressure and great problem solving skills
  • Use initiative and proactive and positive attitude to assist team members to ensure operations run smoothly
  • Dedicated to stay minimum of 12 months & passionate about progressing in career
